SOMETHING FISHY

Cooking isn’t really my strongest suit as I’m sure it isn’t with a lot of you also. I just happen to be someone who loves to experiment things hence my dabble into something I am not especially skilled at, but possess a passion for.

Today’s dish is a simple mash of fish and potatoes and some easily accessible vegetables, perfect for a romantic dinner, hangout with friends, Sunday brunch etcetera. Head on down below and let’s get our hands spicy.



BAKED MARKEREL AND POTATOES

INGREDIENTS

1 Bonga fish
Fresh tomatoes
Carrots
Cabbage
Peas/Runner beans
Cucumber
Onions
Garlic
Seasonings; Knorr, salt, thyme, curry
Vegetable oil
Pepper
Golden potatoes
Lettuce

TOOLS/APPLIANCES

Electrical Oven/ Local Oven( Heated stone or dry sand in deep post with lid)
Fillet knife
Chop board
Pans and pots



PROCEDURE

Wash fish thoroughly and place on a chop board. With the fillet knife, slice open the fish exactly underneath the dorsal fin. Remove the bone line down to the tail of the fish and dispose it.




Wash the fish again and make a seasoning mix with your thyme, curry, Knorr cubes, chopped garlic and onions, salt etcetera. Rub in the mixture on every accessible part of the fish and set aside, preferably in a refrigerator to keep it fresh.



Treat and chop or julienne your vegetables as desired and set aside. Steam the peas and runner beans until half-done.




Peel your potatoes, cut them into smaller sizes of half or quarter depending on their varying sizes. Wash thoroughly and set aside.







Grease your pan with vegetable or olive oil and pre-heat the oven for five minutes on the temperature 400°C place your potatoes on the greased pan, spread previously made seasoning mix, chopped onions and garlic and drizzle oil on it. Bake on the medium heat setting of your oven.




 
When it is almost cooked to desired taste, place your fish in on top of the potatoes drizzling on some oil again and leave in the oven until almost cooked also.




At this point add in your half your chopped vegetables except for the cucumbers and lettuce and cook fish and potatoes until fully cooked which means the vegetables should not be more than 10 minutes on medium heat.





Finally serve while steaming hot with a side of vegetable salad (remaining half of your vegetable plus cucumber and lettuce)




Not so hard, now was it? Every ingredient here cost about 1000 naira and except for the fish they can make about three plates of food, fair enough?
